Ingredients for - Tofu Sloppy Joes

1. Olive oil, divided - 2 tablespoons
2. Yellow onion, diced - 1 medium
3. Ground cumin - 1 teaspoon
4. Salt - 1 pinch
5. Tomato paste - 1 (6 ounce) can
6. Tomato sauce - 1 (12 ounce) can
7. Ketchup - ½ cup
8. Water - ¼ cup
9. Brown sugar - 4 tablespoons
10. Barbeque seasoning - 3 tablespoons
11. Dijon mustard - 2 tablespoons
12. Hot pepper sauce (such as Frank's RedHot®) - 1 tablespoon
13. Paprika - 1 teaspoon
14. Firm tofu, drained and crumbled - 1 pound
15. Zucchini, diced - 2 medium
16. Vegetarian ground beef crumbles (such as MorningStar Farms®), thawed - ½ (12 ounce) package
17. Whole wheat hamburger buns, split and toasted - 12 (6 ounce)

How to cook deliciously - Tofu Sloppy Joes

1. Stage

Heat 1 tablespoon olive oil in a large skillet over medium-high heat and add diced onion. Cook until soft, 3 to 4 minutes. Add cumin and salt; saute until fragrant, about 2 minutes.

2. Stage

Add tomato paste and break up in the skillet, 1 to 2 minutes. Add tomato sauce, ketchup, water, brown sugar, barbeque seasoning, mustard, hot sauce, and paprika. Bring to a boil; lower heat and simmer, covered, for 15 minutes. Set aside.

3. Stage

Heat remaining 1 tablespoon olive oil in a separate pan over medium-high heat. When heated, add tofu and zucchini and cook, stirring occasionally, for 5 minutes. Add vegetarian crumbles and sauce mixture and bring to a low simmer. Cover and cook for an additional 10 minutes.

Assemble Sloppy Joes on toasted buns.
