Ingredients for - Tom Yum Soup

1. Chicken broth - 2 quarts
2. Lemongrass - 4 stalks
3. Thai chile peppers, seeded and minced - 10
4. Garlic, crushed - 5 cloves
5. Makrut lime leaves, torn in half - 10
6. Galangal, thinly sliced - 1 (1 inch) piece
7. Raw shrimp, deveined - 1 ½ pounds
8. Fresh oyster mushrooms, stemmed and sliced - ½ pound
9. White onions, cut into large slices - 2 medium
10. Roma tomatoes, cored and chopped - 2
11. Fish sauce, or more to taste - ½ cup
12. White sugar - 2 tablespoons
13. Fresh cilantro, chopped - 1 bunch
14. Fresh lime juice, or more to taste - ½ cup

How to cook deliciously - Tom Yum Soup

1. Stage

Bring broth to a boil in a large pot.

2. Stage

Remove the outermost leaf from each stalk of lemongrass. Pound stalks to release flavor; cut into 1-inch lengths. Add the lemongrass, Thai chiles, garlic, lime leaves, and galangal to the broth. Cover and boil for 10 minutes.

3. Stage

Reduce heat and add shrimp, mushrooms, onions, and tomatoes to the broth. Boil for 3 minutes. Add fish sauce and sugar; cook for 2 minutes more and remove from heat. Stir in cilantro and lime juice.
