Ingredients for - Twice-Microwaved Potatoes

1. Russet potatoes - 6 medium
2. Sour cream - 1 cup
3. Cubed processed cheese - ½ cup
4. Shredded Cheddar cheese, divided (Optional) - ½ cup
5. Green onions, chopped (Optional) - 4
6. Garlic powder, or to taste - ¼ teaspoon
7. Seasoned salt, or to taste - ⅛ teaspoon
8. Ground black pepper to taste - ⅛ teaspoon
9. Chopped green onion (Optional) - 1 tablespoon

How to cook deliciously - Twice-Microwaved Potatoes

1. Stage

Poke potatoes all over with the tines of a fork.

2. Stage

Working in batches if necessary, microwave potatoes on high, turning halfway through for more even cooking, about 4 minutes per potato. Potatoes are done when they can be easily poked with a fork.

Remove potatoes from the microwave and cut in half lengthwise. Scoop out flesh with a large spoon, leaving skins intact.

Place flesh into a large, microwave-safe bowl. Stir in sour cream, processed cheese, 1/2 cup Cheddar cheese, 4 green onions, garlic powder, seasoned salt, and pepper until well combined. Microwave on high until heated through, 2 to 3 minutes.

Scoop hot potato mixture back into potato skins. Garnish with remaining 1/2 cup Cheddar and 1 tablespoon green onion.
