1. Chicken stock - 10 ½ cups
2. Galangal - 12 thin slices
3. Makrut lime leaves - 6
4. Lemon grass, smashed and cut into 1 inch pieces - 3 stalks
5. Hot chile paste - 3 tablespoons
6. Fish sauce - 6 tablespoons
7. Fresh lime juice - 9 tablespoons
8. Shallots, thinly sliced - 6
9. Plum (Roma) tomatoes, chopped - 3
10. Sliced button mushrooms - 1 cup
11. Thinly sliced bok choy - 1 ½ cups
12. Thinly sliced carrot - 1 cup
13. Fresh cilantro, for garnish - 6 sprigs
14. Green onions, thinly sliced - 6

How to cook deliciously - Vegetable Tom Yum Soup

1. Stage

Bring chicken stock, galangal, lime leaves, lemon grass, and hot chile paste to a boil in a large pot. Stir in fish sauce, lime juice, shallots, tomato, mushrooms, bok choy, and carrot. Reduce heat to medium-low, and simmer until the vegetables are tender, about 25 minutes. Garnish with cilantro and green onion before serving.
