1. Olive oil - 2 tablespoons
2. Yellow onion, chopped - 1
3. Chopped garlic - 2 tablespoons
4. Kale, stems removed and leaves chopped - 1 bunch
5. Water - 8 cups
6. White potatoes, peeled and cubed - 6
7. Cannellini beans (drained if desired) - 2 (15 ounce) cans
8. Diced tomatoes - 1 (15 ounce) can
9. Vegetable bouillon (such as Knorr) - 6 cubes
10. Dried parsley - 2 tablespoons
11. Italian seasoning - 1 tablespoon
12. Salt and pepper to taste - 1 tablespoon

How to cook deliciously - Vegetarian Kale Soup

1. Stage

Heat olive oil in a large soup pot over medium-high heat; cook onion and garlic until soft, 2 to 3 minutes. Stir in kale and cook until wilted, about 2 minutes. Stir in water, potatoes, beans, tomatoes, vegetable bouillon, parsley, and Italian seasoning.
