Ingredients for - Very Easy Mushroom Barley Soup

1. Olive oil - ¼ cup
2. Chopped onion - 1 cup
3. Diced carrots - ¾ cup
4. Chopped celery - ½ cup
5. Minced garlic - 1 teaspoon
6. Sliced fresh mushrooms - 1 pound
7. Chicken broth - 6 cups
8. Barley - ¾ cup
9. Salt and pepper to taste - ¾ cup

How to cook deliciously - Very Easy Mushroom Barley Soup

1. Stage

Heat oil in a large soup pot over medium heat. Add onion, carrots, celery and garlic; cook and stir until onion has softened and turned translucent, about 5 minutes. Stir in mushrooms and continue to cook for about 3 minutes.

Pour in chicken broth, add barley, and bring to a boil. Reduce heat to low, cover, and simmer until barley is tender, about 50 minutes.

Season with salt and pepper before serving.
