Ingredients for - Warm Sweet Potato Salad

1. Sweet potatoes, peeled and diced 6 large
2. Baking potatoes, peeled and diced 4 large
3. Mayonnaise ½ cup
4. Dijon mustard ¼ cup
5. Balsamic Vinegar ⅓ cup
6. Ground turmeric 1 teaspoon
7. Chopped chives 1 tablespoon
8. Salt and ground black pepper to taste 1 tablespoon
9. Crisply cooked bacon, crumbled 2 slices
10. Green onions, finely chopped 2
11. Red onion, finely chopped 1

How to cook deliciously - Warm Sweet Potato Salad

1 . Stage

Place the diced sweet potatoes and potatoes in a Dutch oven, cover with water, and bring to a boil. Boil until the potatoes are fork tender, but not mushy, about 20 minutes. Drain and cool the cooked potatoes slightly.

2 . Stage

Meanwhile, mix together the mayonnaise, mustard, balsamic vinegar, turmeric, chives, salt and pepper in a large bowl. Add the bacon, green onions, red onion and cooked potatoes and toss to coat. Serve garnished with extra chives or green onion.
