Ingredients for - Warm Sweet Potato Salad

1. Sweet potatoes, peeled and diced - 6 large
2. Baking potatoes, peeled and diced - 4 large
3. Mayonnaise - ½ cup
4. Dijon mustard - ¼ cup
5. Balsamic Vinegar - ⅓ cup
6. Ground turmeric - 1 teaspoon
7. Chopped chives - 1 tablespoon
8. Salt and ground black pepper to taste - 1 tablespoon
9. Crisply cooked bacon, crumbled - 2 slices
10. Green onions, finely chopped - 2
11. Red onion, finely chopped - 1

How to cook deliciously - Warm Sweet Potato Salad

1. Stage

Place the diced sweet potatoes and potatoes in a Dutch oven, cover with water, and bring to a boil. Boil until the potatoes are fork tender, but not mushy, about 20 minutes. Drain and cool the cooked potatoes slightly.

2. Stage

Meanwhile, mix together the mayonnaise, mustard, balsamic vinegar, turmeric, chives, salt and pepper in a large bowl. Add the bacon, green onions, red onion and cooked potatoes and toss to coat. Serve garnished with extra chives or green onion.
