1. Olive oil, or more to taste 3 tablespoons
2. Garlic, minced 3 cloves
3. Onion, chopped ½ medium
4. Chopped baby carrots 1 cup
5. Zucchini, chopped 1 large
6. Mushrooms, sliced 4 medium
7. Potato, peeled and diced 1 medium
8. Diced tomatoes 1 (16 ounce) can
9. Tomato sauce 1 (8 ounce) can
10. Shredded fresh spinach 1 cup
11. Vegetable broth 3 cups
12. Water 2 ½ cups
13. Kidney beans 1 (15 ounce) can
14. Dried basil 2 tablespoons
15. Dried oregano 1 tablespoon
16. Ground thyme 1 pinch
17. Cayenne pepper 1 pinch
18. Salt and ground black pepper to taste 1 pinch

How to cook deliciously - Kari's Vegetarian Minestrone

1 . Stage

Saute oil and garlic in a large pot over medium-low heat until fragrant, about 2 minutes. Add onion and saute for 2 to 3 minutes. Add carrots and saute for 3 minutes, followed by zucchini, mushrooms, and finally potato. Add more oil if necessary.

2 . Stage

Stir in diced tomatoes, tomato sauce, and spinach; cook for 3 minutes. Stir in vegetable broth, water, kidney beans, basil, oregano, thyme, cayenne, salt, and pepper. Bring to a simmer. Reduce heat to low and simmer for 1 hour; the more simmer time the better.
