Ingredients for - Beef and Barley Soup III

1. Vegetable oil - 1 tablespoon
2. Chopped onion - 1 ½ cups
3. Chopped celery - 1 cup
4. Chopped carrots - 1 cup
5. Garlic, minced - 2 cloves
6. Beef stock - 10 cups
7. Barley - ¾ cup
8. Bay leaf - 1
9. Fresh thyme, chopped - 3 sprigs
10. Red wine - ½ cup
11. Cubed potatoes - 2 cups
12. Diced cooked beef - 2 cups
13. Browning sauce (Optional) - 1 teaspoon
14. Chopped cabbage - 1 ½ cups
15. Salt and pepper to taste - 1 ½ cups

How to cook deliciously - Beef and Barley Soup III

1. Stage

In a large pot over medium heat, combine the oil, onions, celery, carrots, and garlic. Saute for 5 minutes, or until tender. Add the beef stock, barley, bay leaf and thyme and simmer until barley is softened but not mushy. Add the wine, potatoes and beef.

2. Stage

Add the browning and seasoning sauce now if you want your soup to have more of a brown color. Simmer another 15 minutes and add the cabbage. Allow to simmer another 15 minutes, or until all vegetables are tender. Salt and pepper to taste.
