Ingredients for - Beef and Barley Soup III

1. Vegetable oil 1 tablespoon
2. Chopped onion 1 ½ cups
3. Chopped celery 1 cup
4. Chopped carrots 1 cup
5. Garlic, minced 2 cloves
6. Beef stock 10 cups
7. Barley ¾ cup
8. Bay leaf 1
9. Fresh thyme, chopped 3 sprigs
10. Red wine ½ cup
11. Cubed potatoes 2 cups
12. Diced cooked beef 2 cups
13. Browning sauce (Optional) 1 teaspoon
14. Chopped cabbage 1 ½ cups
15. Salt and pepper to taste 1 ½ cups

How to cook deliciously - Beef and Barley Soup III

1 . Stage

In a large pot over medium heat, combine the oil, onions, celery, carrots, and garlic. Saute for 5 minutes, or until tender. Add the beef stock, barley, bay leaf and thyme and simmer until barley is softened but not mushy. Add the wine, potatoes and beef.

2 . Stage

Add the browning and seasoning sauce now if you want your soup to have more of a brown color. Simmer another 15 minutes and add the cabbage. Allow to simmer another 15 minutes, or until all vegetables are tender. Salt and pepper to taste.
