How to cook deliciously - White Chocolate Truffles
1. Stage
In a double boiler or a metal bowl set over barely simmering water, melt the cubed butter into the heavy whipping cream and stir occasionally until fully combined. Remove the mixture from heat and gradually add the coarsely chopped white candy coating, stirring continuously with a rubber spatula until the coating begins to melt.
2. Stage
Return the mixture to the heat and stir constantly until the mixture is completely smooth. Remove from heat again and stir in the confectioners' sugar until fully incorporated. Pour the mixture into an 8-inch square pan and chill in the refrigerator for 20 minutes or until it is slightly hardened. Editor's Tip: If the mixture begins to separate, beat it with a mixer for 30 seconds to bring it back together.
3. Stage
Using a melon baller or a small spoon, scoop out portions of the chilled truffle mixture and shape them into 1-inch balls by rolling them between your hands. Roll each ball in coarse sugar or additional confectioners' sugar to coat the exterior. Once all the truffles are shaped and coated you can store them in an airtight container in the refrigerator until ready to serve.
