1. Butter 4 tablespoons
2. Finely chopped shallots ¼ cup
3. Portobello mushrooms, sliced 2 ounces
4. Crimini mushrooms, sliced 2 ounces
5. Shiitake mushrooms, sliced 2 ounces
6. Morel mushrooms, sliced 2 ounces
7. Chanterelle mushrooms, sliced 2 ounces
8. Red wine ½ cup
9. Beef demi glace 6 fluid ounces
10. Salt and freshly ground black pepper to taste 6 fluid ounces

How to cook deliciously - Wild Mushroom Sauce

1 . Stage

Melt butter in a saucepan over medium heat. Sauté shallots briefly, then stir in all mushrooms. Sauté until tender and translucent, about 3 minutes. Pour in red wine, and simmer for 3 minutes. Stir in demi-glace and simmer for 6 minutes, or until sauce has thickened.
