Ingredients for - Zhug

1. Flat-leaf parsley, stems removed - 1 ounce
2. Fresh cilantro, stems removed - 1 ounce
3. Garlic - 2 cloves
4. Lemon, juiced and zested - ¼
5. Green bird's eye chile peppers, stems removed - 3
6. Ground cumin - ¼ teaspoon
7. Ground coriander - ¼ teaspoon
8. Salt and pepper to taste - ¼ teaspoon
9. Ice cubes - 2
10. Extra-virgin olive oil, or as needed - ¼ cup

How to cook deliciously - Zhug

1. Stage

Wash and dry the parsley and cilantro.

2. Stage

Combine parsley, cilantro, garlic, lemon juice and zest, chiles, cumin, coriander, salt, pepper, ice, and 2 tablespoons olive oil in a food processor fitted with a blade. Blend until a smooth paste is achieved, adding more oil as necessary.

3. Stage

Cover and refrigerate at least 1 hour before serving to allow flavors to meld.
