Ingredients for - Zhug

1. Flat-leaf parsley, stems removed 1 ounce
2. Fresh cilantro, stems removed 1 ounce
3. Garlic 2 cloves
4. Lemon, juiced and zested ¼
5. Green bird's eye chile peppers, stems removed 3
6. Ground cumin ¼ teaspoon
7. Ground coriander ¼ teaspoon
8. Salt and pepper to taste ¼ teaspoon
9. Ice cubes 2
10. Extra-virgin olive oil, or as needed ¼ cup

How to cook deliciously - Zhug

1 . Stage

Wash and dry the parsley and cilantro.

2 . Stage

Combine parsley, cilantro, garlic, lemon juice and zest, chiles, cumin, coriander, salt, pepper, ice, and 2 tablespoons olive oil in a food processor fitted with a blade. Blend until a smooth paste is achieved, adding more oil as necessary.

3 . Stage

Cover and refrigerate at least 1 hour before serving to allow flavors to meld.
