1. Unsweetened almond milk - 1 cup
2. Unsalted raw cashews - 1 cup
3. Lemon, juiced - ½
4. Canned chipotle pepper in adobo sauce - 1
5. Salt, or to taste - 1 teaspoon
6. Garlic - 1 clove
7. Ground black pepper to taste - 1 pinch

1. Stage

Combine almond milk, cashews, lemon juice, chipotle pepper, salt, and garlic in a high-powered blender (such as Vitamix®). Process on high speed until mixture is heated through and thickened to the consistency of a cheese sauce, 5 to 7 minutes. Taste and adjust amounts of salt and pepper.
