1. Russet potatoes, peeled and cubed 2 small
2. Carrots, chopped ½ cup
3. Yellow bell pepper, chopped ⅓ large
4. Yellow onion, peeled and chopped ¼ large
5. Prepared garlic hummus 5 tablespoons
6. Coconut milk, or more as needed ⅓ cup
7. Nutritional yeast ½ tablespoon
8. Lemon juice 1 ½ teaspoons
9. Garlic powder 1 teaspoon
10. Black pepper to taste 1 teaspoon
11. Salt, or to taste 2 pinches

1 . Stage

Fill a pot with water and bring to a boil. Add potatoes, carrots, bell pepper, and onion and cook until potatoes are tender, 15 to 20 minutes. Cook 1 more minute. Drain.

Combine potatoes, carrots, bell pepper, onion, hummus, coconut milk, nutritional yeast, lemon juice, garlic powder, black pepper, and salt in a blender or food processor; blend until smooth and creamy.
