Ingredients for - African Peanut Stew

1. 1 can (28 ounces) diced tomatoes, undrained -
2. 1 cup fresh cilantro leaves -
3. 1/2 cup chunky peanut butter -
4. 3 garlic cloves, halved -
5. 2 teaspoons ground cumin -
6. 1 teaspoon salt -
7. 1/2 teaspoon ground cinnamon -
8. 1/4 teaspoon smoked paprika -
9. 3 pounds sweet potatoes (about 6 medium), peeled and cut into 1-inch pieces -
10. 1 can (15 ounces) garbanzo beans or chickpeas, rinsed and drained -
11. 1 cup water -
12. 8 cups chopped fresh kale -
13. Optional: Chopped peanuts and additional cilantro leaves -

How to cook deliciously - African Peanut Stew

1. Stage

Place the can of diced tomatoes, cilantro leaves, chunky peanut butter, garlic cloves, ground cumin, salt, ground cinnamon and smoked paprika into a food processor. Puree until smooth.

2. Stage

Pour the puréed ingredients into a 5-quart slow cooker. Stir in the chopped sweet potato, garbanzo beans and water.

3. Stage

Cover and cook on low for six to eight hours, or until the potatoes are tender. Stir in the fresh kale during the last 30 minutes of cooking. When it’s time to serve, feel free to serve the African Peanut Stew in bowls with chopped peanuts and cilantro on top.
