1. Distilled white vinegar - ⅓ cup
2. White sugar - ⅓ cup
3. Ground coriander - ½ teaspoon
4. Crushed red pepper flakes - ½ teaspoon
5. Salt - ½ teaspoon
6. Cucumbers - halved, seeded, and sliced - 2 pounds
7. Finely chopped red onion - ½ cup
8. Roma (plum) tomatoes, chopped - 2
9. Chopped fresh cilantro - 2 tablespoons
10. Chopped fresh mint - 2 tablespoons
11. Chopped roasted peanuts - ¼ cup
12. Fresh mint sprigs - 2 sprigs

How to cook deliciously - Asian Cucumber Thai Salad

1. Stage

Whisk together the vinegar, sugar, coriander, red pepper flakes, and salt in a salad bowl until the sugar is dissolved. Stir in the cucumbers, onion, tomatoes, cilantro, and chopped mint, and toss to coat with dressing. Cover and refrigerate for 1 hour to blend the flavors.

Before serving, toss again with chopped peanuts, and garnish with sprigs of fresh mint.
