Ingredients for - Avocado Potato Salad

1. Unpeeled red potatoes, cut into 1-inch cubes 6 medium
2. Avocados - peeled, pitted, and cubed 2
3. Lime juice, divided 6 tablespoons
4. Garlic, crushed 2 cloves
5. Nonfat plain yogurt ½ cup
6. Honey mustard 2 tablespoons
7. Extra-virgin olive oil 1 tablespoon
8. White sugar 2 teaspoons
9. Salt 1 teaspoon
10. Freshly ground black pepper 1 teaspoon
11. Chopped sweet onion ½ cup
12. Chopped fresh cilantro ¼ cup

How to cook deliciously - Avocado Potato Salad

1 . Stage

Place potatoes in a large pot with water to cover. Bring to a boil; continue to boil until just tender, about 15 minutes.

2 . Stage

Meanwhile, toss avocado with 2 tablespoons of lime juice and set aside.

3 . Stage

Drain the potatoes and place in a bowl of cold water to cool, about 10 minutes. Drain well and transfer to a large bowl.

4 . Stage

Whisk remaining lime juice, garlic, yogurt, honey mustard, olive oil, sugar, salt, and pepper together in a nonreactive bowl for dressing. Taste and adjust seasoning to your liking.
