1. Creamy peanut butter - 2 tablespoons
2. Reduced-sodium soy sauce - 2 tablespoons
3. Water - 2 tablespoons
4. Sriracha sauce - 1 tablespoon
5. Lime, juiced - 1 medium
6. Fresh ginger root, minced - 1 (1 inch) piece
7. Garlic, minced - 1 clove
8. Olive oil - 1 tablespoon
9. Baby bok choy, halved lengthwise, or more to taste - 2 medium heads
10. Salt and freshly ground black pepper to taste - 2 medium heads
11. Chopped peanuts - ¼ cup
12. Chopped fresh cilantro - ¼ cup

How to cook deliciously - Baby Bok Choy with Thai Peanut Sauce

1. Stage

Whisk peanut butter, soy sauce, water, Sriracha, lime juice, ginger, and garlic together for sauce and set aside so flavors can mix.

2. Stage

Heat oil in a large, nonstick saute pan over medium-high heat. Sear the bok choy, cut-sides down, until they are starting to brown, 3 to 4 minutes. Flip them over and continue to cook until browned, 2 to 3 minutes more. Season with salt and pepper.

Place bok choy on a plate. Drizzle with the sauce and sprinkle with peanuts and cilantro.
