1. Refrigerated hash brown potatoes - 1 (20 ounce) package
2. Pure Farmland® All Natural Uncured Bacon, cooked, roughly chopped - 8 slices
3. Freshly grated Parmesan cheese - ¼ cup
4. All-purpose flour - 2 tablespoons
5. Garlic, minced - 2 cloves
6. Eggs, beaten - 2 large
7. Green onions, thinly sliced - 3
8. Ground cayenne pepper - ¼ teaspoon
9. Kosher salt and freshly ground black pepper, to taste - ¼ teaspoon
10. Olive oil - 2 tablespoons
11. Farmland® Ham Steak, cut in half - 4 slices
12. Eggs, sunny side up, or cooked to your choice - 4
13. Avocado, thinly sliced - 1

How to cook deliciously - Bacon Potato Cakes with Ham Steak, Egg, and Sliced Avocado

1. Stage

Bacon Potato Cakes: In large bowl, combine potatoes, bacon, Parmesan cheese, flour, garlic, eggs, green onions, and cayenne pepper; season with salt and pepper.

2. Stage

Heat olive oil in large skillet over medium-high heat. Scoop tablespoons of batter for each pancake, flattening with spatula, and cook until underside is nicely golden brown, about 2 to 3 minutes. Flip and cook on other side, about 2 minutes longer.

To Serve: Place bacon potato cakes on plate and top with ham steak. Top with fried eggs, followed by sliced avocado fanned on top.
