Ingredients for - Brown Rice Salad

1. Uncooked brown rice - 1 ⅔ cups
2. Water - 2 ½ cups
3. Low fat sour cream - 1 cup
4. Red wine vinegar - 1 tablespoon
5. Fresh lime juice - 1 tablespoon
6. Honey - 2 teaspoons
7. Ground cumin - ½ teaspoon
8. Chili powder - ¼ teaspoon
9. Salt - ¼ teaspoon
10. Black pepper - ⅛ teaspoon
11. Bacon - 2 slices
12. Diced red bell pepper - 1 cup
13. Chopped green onions - 1 cup
14. Frozen green peas, thawed - ½ cup
15. Toasted almond slices - ¼ cup
16. Chopped cilantro - 2 tablespoons

How to cook deliciously - Brown Rice Salad

1. Stage

Place rice and water in a medium saucepan, and bring to a boil. Reduce heat to low, cover, and simmer 45 to 60 minutes.

In a medium bowl, mix the sour cream, red wine vinegar, lime juice, honey, cumin, chili powder, salt, and pepper. Refrigerate until ready to use.

Place bacon in a skillet. Cook over medium high heat until evenly brown. Drain, crumble, and set aside.

In a large bowl, mix the rice, dressing mixture, bacon, bell pepper, green onions, peas, almonds, and cilantro. Chill at least 1 hour before serving.
