1. Beef chuck roast, cut into 1/2-inch thick strips - 2 pounds
2. Salt and pepper to taste - 2 pounds
3. Vegetable oil - 1 tablespoon
4. Sliced mushrooms - 8 ounces
5. Onion, sliced or diced - ½ medium
6. Butter - 1 tablespoon
7. Garlic, minced - 2 cloves
8. All-purpose flour - 1 ½ tablespoons
9. White wine - ½ cup
10. Beef broth, divided - 2 cups
11. Creme fraiche - ¾ cup
12. Fresh chopped chives - 1 tablespoon
13. Salt and pepper to taste - 1 tablespoon

1. Stage

Season beef generously with salt and pepper.

2. Stage

Heat oil in a large skillet over high heat until nearly smoking. Stir in beef; cook, stirring constantly, for 6 to 7 minutes, until liquid evaporates and meat browns. Dotdash Meredith Food Studios

Return beef to the pan. Stir in remaining cup of broth; bring to a simmer and cook on low heat for about 1 hour, covered, until beef is tender and sauce is thick. Stir every 20 minutes.
