How to cook deliciously - Cherry Mousse

Remove from the heat. Soak the agar-agar in 50 ml of water for 5 minutes. Beat the slightly cooled mixture with a mixer until it is light and doubled in volume.

Bring the agar-agar to the boil and simmer on the lowest heat for a couple of minutes. Pour into the cherry mousse, add to taste the delayed cherry puree and once again whip the mass until fluffy.
