Ingredients for - Chocolate-Covered Bacon

1. 12 thick-sliced bacon strips (about 1 pound) -
2. 6 ounces white candy coating, coarsely chopped -
3. Optional toppings: Chopped dried apple chips, apricots and crystallized ginger, finely chopped pecans and pistachios, toasted coconut, kosher salt, brown sugar, cayenne pepper and coarsely ground black pepper -
4. 1 cup semisweet chocolate chips -
5. 1 tablespoon shortening -

How to cook deliciously - Chocolate-Covered Bacon

1. Stage

Preheat oven to 400°F. While the oven is warming, thread the bacon strips by weaving back and forth onto twelve 12 inch soaked wooden skewers. Place them on a rack in a large baking pan. Bake until bacon is crisp, about 20 to 25 minutes. Drain the bacon on paper towels and allow it to cool completely.

Melt the candy coating in a microwave or on the stovetop, stirring until completely smooth. Brush the coating onto both sides of six bacon strips and sprinkle with your desired toppings. Place these on a waxed paper-lined baking sheet.

Next, prepare your chocolate-covered bacon. Start by stirring the chocolate chips in a microwave or on a stovetop until melted and smooth. Brush onto both sides of the remaining bacon, and decorate with desired toppings. Place on a waxed paper-lined baking sheet with the first batch.

Place the wax paper-lined baking sheet into the fridge and allow the chocolate and toppings to set. Store it in the fridge until ready to eat. Editor's Tip: Be sure to thoroughly chop the nuts, if you're using any. Finely chopped nuts will sprinkle well, and also set on the chocolate better.
