1. Stage
For the mousse, combine 300 ml milk, 4 tablespoons sugar, 2 tablespoons coffee and salt in a saucepan, put on medium heat, boil. Vary the amount of coffee depending on your taste - you can always add or reduce the amount. Sprinkle in the semolina in a thin stream. Cook the porridge with constant stirring for about 7-8 minutes. The porridge should be thick. Remove from the heat, cover and set aside.

Add butter to the semolina, and then beat it with a mixer for a couple of minutes. If you find the mousse too thick, you can add a little milk.

For the chocolate layer in a turkey, combine 2 tablespoons unsweetened cocoa powder and 2 tablespoons sugar, pour 50 ml. milk. Cook for 2 to 3 minutes.

Melt the dark chocolate in a water bath. Add 40 grams of room temperature butter, mix well. Then mix the 2 chocolate masses until homogeneous. Slightly cool the resulting chocolate sauce.
