2. Sweet potatoes, peeled and cubed 3 pounds

4. Mayonnaise ⅔ cup
5. Honey mustard 1 tablespoon
6. Chopped crystallized ginger 2 tablespoons
7. Grated orange zest 2 teaspoons
8. Cubed fresh pineapple 1 ¼ cups
9. Chopped toasted walnuts 1 cup
10. Dried cranberries 1 cup
11. Finely diced shallot ½ cup
12. Celery, diced 4 stalks

1 . Stage

Bring a large pot of water to a boil; add salt. Add sweet potatoes and cook until just tender, 15 to 20 minutes. Drain.
