Ingredients for - Curried Cauliflower and Chickpeas

1. Olive oil - 1 tablespoon
2. Onion, chopped - 1 medium
3. Curry powder - 2 tablespoons
4. Fresh ginger, peeled and minced - 1 (1 inch) piece
5. Diced tomatoes - 1 (14 ounce) can
6. Tomato paste - 2 tablespoons
7. Water - 1 cup
8. Cauliflower, cut into florets - 1 medium head
9. Chickpeas, rinsed and drained - 2 (15 ounce) cans

How to cook deliciously - Curried Cauliflower and Chickpeas

1. Stage

Heat olive in a skillet over medium heat. Add onion, curry powder, and ginger; cook and stir until onion is soft, 5 to 7 minutes. Add tomatoes and cook for 6 minutes.

2. Stage

Stir in tomato paste, then 1 cup water. Add cauliflower and chickpeas; stir to coat. Reduce heat, cover, and simmer until cauliflower is tender, 15 to 20 minutes.

3. Stage

Uncover, and cook until excess moisture evaporates, 1 to 2 minutes; do not burn. Season to taste.
