Ingredients for - Dill Gazpacho

1. Ripe tomatoes, finely chopped 6 medium
2. Cucumbers, peeled and finely chopped 2
3. Onion, finely chopped 1
4. Green bell pepper, finely chopped 1
5. Jalapeno pepper, seeded and minced 1
6. Lemon, juiced 1 large
7. Balsamic Vinegar 1 tablespoon
8. Olive oil 2 teaspoons
9. Kosher salt 1 teaspoon
10. Ground black pepper ½ teaspoon
11. Chopped fresh dill ¼ cup

How to cook deliciously - Dill Gazpacho

1 . Stage

In a large bowl, stir together tomatoes, cucumber, onion, bell pepper, and jalapeno pepper. Season with lemon juice, balsamic vinegar, olive oil, salt and pepper.

2 . Stage

In a blender or food processor, puree half of the mixture until smooth. Return to bowl, stir in dill and mix well. Cover and chill for at least one hour before serving.
