1. Young arugula leaves, rinsed and dried - 4 cups
2. Cherry tomatoes, halved - 1 cup
3. Pine nuts - ¼ cup
4. Grated Parmesan cheese - ¼ cup
5. Grapeseed or olive oil - 2 tablespoons
6. Rice vinegar - 1 tablespoon
7. Salt and freshly ground black pepper to taste - 1 tablespoon
8. Avocado - peeled, pitted, and sliced - 1 large

1. Stage

Combine arugula, tomatoes, pine nuts, Parmesan, oil, and vinegar in a large, lidded plastic bowl. Season with salt and pepper, then cover with the lid and shake to mix.
