1. Minute® Multi-Grain Medley, uncooked - 1 bag
2. Vegetable broth - 1 cup
3. Olive oil - 2 tablespoons
4. Fresh lemon juice - 1 tablespoon
5. Shallots, minced - 1 tablespoon
6. Dijon-style mustard - ¼ teaspoon
7. Chopped fresh parsley - ½ cup
8. Cucumber, peeled, seeded, and chopped - ½ cup
9. Cherry tomatoes, halved - ½ cup
10. Green onions, sliced - 2
11. Fresh mint leaves, chopped - 1 tablespoon
12. Salt and ground black pepper, to taste - 1 tablespoon
13. Crumbled feta cheese (Optional) - ¼ cup

How to cook deliciously - Mediterranean Tabbouleh Salad

1. Stage

Prepare Multi-Grain Medley according to package directions, substituting broth for water. Cool.

2. Stage

In a large bowl whisk together olive oil, lemon juice, shallots and mustard. Fold in Multi-Grain Medley and remaining ingredients. Season with salt and pepper to taste. If desired, top with feta cheese.
