1. Minute® Multi-Grain Medley, uncooked 1 bag
2. Vegetable broth 1 cup
3. Olive oil 2 tablespoons
4. Fresh lemon juice 1 tablespoon
5. Shallots, minced 1 tablespoon
6. Dijon-style mustard ¼ teaspoon
7. Chopped fresh parsley ½ cup
8. Cucumber, peeled, seeded, and chopped ½ cup
9. Cherry tomatoes, halved ½ cup
10. Green onions, sliced 2
11. Fresh mint leaves, chopped 1 tablespoon
12. Salt and ground black pepper, to taste 1 tablespoon
13. Crumbled feta cheese (Optional) ¼ cup

How to cook deliciously - Mediterranean Tabbouleh Salad

1 . Stage

Prepare Multi-Grain Medley according to package directions, substituting broth for water. Cool.

2 . Stage

In a large bowl whisk together olive oil, lemon juice, shallots and mustard. Fold in Multi-Grain Medley and remaining ingredients. Season with salt and pepper to taste. If desired, top with feta cheese.
