1. First-cut brisket (or flat-cut), trimmed of fat - 3 pounds
2. Kosher salt - 4 teaspoons
3. Freshly ground black pepper - 2 teaspoons
4. Cayenne pepper - ½ teaspoon
5. Butter - 2 tablespoons
6. Yellow onion, sliced - 1 large
7. Kosher salt - 1 teaspoon
8. Garlic, sliced - 4 cloves
9. Minced fresh rosemary - 1 tablespoon
10. Apple juice - 1 cup

Preheat the oven to 325 degrees F (165 degrees C).
