1. Granulated sugar - ⅓ cup
2. Quick-rising yeast (such as Fleischmann's RapidRise®) - 1 (.25 ounce) package
3. Kosher salt - 2 teaspoons
4. All-purpose flour, divided, or more as needed - 4 ½ cups
5. Eggnog - ½ cup
6. Sour cream - ½ cup
7. Unsalted butter, softened - 6 tablespoons
8. Egg, lightly beaten - 1 large
9. Cooking spray - 1 large
10. Unsalted butter, at room temperature - ½ cup
11. Firmly packed light brown sugar - 1 cup
12. Ground cinnamon - 4 teaspoons
13. Freshly grated nutmeg, or to taste - 2 teaspoons
14. Cream cheese, at room temperature - 4 ounces
15. Unsalted butter - 4 tablespoons
16. Powdered sugar - 1 ½ cups
17. Eggnog - 4 tablespoons
18. Vanilla extract - ½ teaspoon

Combine sugar, yeast, salt, and 4 cups of the flour in the work bowl of a stand mixer fitted with the paddle attachment. Beat on low speed until just combined, about 15 seconds. With mixer running on low speed, add eggnog, sour cream, butter, and egg. Continue beating until dough forms, 1 to 2 minutes. Switch to a dough hook attachment. Beat on medium-low speed until dough is smooth and elastic, 6 to 9 minutes; gradually add remaining 1/2 cup flour, 1/2 to 1 teaspoon at a time, if necessary.
