1. Sushi-grade yellowfin (ahi) tuna steaks 1 pound
2. Lemon, zested and juiced 1
3. Onion, finely diced ½ cup
4. Diced red apple (such as Jazz™) ½ cup
5. Thinly sliced Belgian endive ½ cup
6. Mayonnaise 2 tablespoons
7. Horseradish mustard 1 teaspoon
8. Honey ½ teaspoon
9. Soy sauce ¼ teaspoon
10. Celery salt ¼ teaspoon
11. Cayenne pepper ⅛ teaspoon

1 . Stage

Pat tuna steaks dry. Cut across the grain into thin slices; cut slices into smaller pieces.
