1. Sushi-grade yellowfin (ahi) tuna steaks - 1 pound
2. Lemon, zested and juiced - 1
3. Onion, finely diced - ½ cup
4. Diced red apple (such as Jazz™) - ½ cup
5. Thinly sliced Belgian endive - ½ cup
6. Mayonnaise - 2 tablespoons
7. Horseradish mustard - 1 teaspoon
8. Honey - ½ teaspoon
9. Soy sauce - ¼ teaspoon
10. Celery salt - ¼ teaspoon
11. Cayenne pepper - ⅛ teaspoon

1. Stage

Pat tuna steaks dry. Cut across the grain into thin slices; cut slices into smaller pieces.
