Ingredients for - Firecracker Chicken Meatballs

1. 1 lb. ground chicken
2. 1/2 c. panko bread crumbs
3. 1/4 c. chopped chives, divided
4. 2 cloves garlic, minced
5. 1 egg
6. Kosher salt
7. Pinch cayenne pepper
8. 1 tbsp. vegetable oil, for frying
9. 1/2 c. hot sauce (such as Frank's)
10. 1/4 c. lightly packed brown sugar
11. 2 tbsp. apple cider vinegar
12. Kosher salt
13. Red pepper flakes

How to cook deliciously - Firecracker Chicken Meatballs

1 . Stage

Form meatballs: In a large bowl, mix together ground chicken, panko bread crumbs, 2 tablespoons chives, garlic, and egg. Season mixture with salt and pepper, then form into small balls about the size of golf balls. 

2 . Stage

Make sauce: In a medium bowl, whisk together hot sauce, brown sugar, and apple cider vinegar. Season with salt and red pepper flakes.  

3 . Stage

In a large skillet over medium heat, heat vegetable oil. Add meatballs in a single layer and cook until seared all over, 3 to 4 minutes per side. Add sauce and bring to simmer. Simmer until sauce has thickened slightly and meatballs are cooked through, about 10 minutes. 

4 . Stage

Garnish with remaining 2 tablespoons chives and serve warm.
