Ingredients for - French Spring Soup

1. Butter - ¼ cup
2. Leeks, chopped - 1 pound
3. Onion, chopped - 1
4. Water - 2 quarts
5. Potatoes, chopped - 3 large
6. Carrots, chopped - 2 large
7. Fresh asparagus, trimmed and cut into 1 inch pieces - 1 bunch
8. Uncooked long-grain white rice - ⅓ cup
9. Salt - 4 teaspoons
10. Fresh spinach - ½ pound
11. Heavy cream - 1 cup

How to cook deliciously - French Spring Soup

1. Stage

Melt the butter in a large pot over medium heat. Stir in the leeks and onion, and cook until tender.

2. Stage

Pour water into the pot. Mix in potatoes, carrots, asparagus, and rice. Season with salt. Bring to a boil, reduce heat, and simmer 30 minutes, until vegetables and rice are tender.

3. Stage

Stir spinach and heavy cream into the soup mixture, and continue cooking about 5 minutes before serving.
