2. Shredded coconut 1 cup
3. White sugar ½ cup
4. Chopped toasted almonds ⅓ cup
5. Baking powder 1 ½ teaspoons
6. Orange zest ¾ teaspoon
7. Baking soda ½ teaspoon
8. Salt ¼ teaspoon
9. Unsweetened coconut milk ¾ cup
10. Orange juice ¼ cup
11. Extra virgin olive oil ¼ cup

1 . Stage

Preheat oven to 400 degrees F (200 degrees C). Lightly grease a 12 cup muffin pan.
