3. Portobello mushrooms, thinly sliced - 1 pound
4. White mushrooms, thinly sliced - 1 pound
5. Shallots, diced - 2 medium
6. Arborio rice - 1 ½ cups
7. Dry white wine - ½ cup
8. Butter - 4 tablespoons
9. Finely chopped chives - 3 tablespoons
10. Freshly grated Parmesan cheese - ⅓ cup
11. Sea salt and freshly ground black pepper to taste - ⅓ cup

Warm broth in a saucepan over low heat.
