1. 1/4 cup butter, softened -
2. 2 green onions, finely chopped -
3. 2 tablespoons minced fresh parsley -
4. 2 tablespoons grated fresh gingerroot -
5. 3 garlic cloves, minced -
6. 1 teaspoon salt, divided -
7. 1/2 teaspoon pepper, divided -
8. 4 Cornish game hens (20 to 24 ounces each) -

How to cook deliciously - Grilled Cornish Hens

1. Stage

In a small bowl, thoroughly combine the softened butter, green onions, parsley, ginger, garlic, 1/2 teaspoon of the salt and 1/4 teaspoon of the pepper.

Carefully rub the butter mixture under the skin and over the top of each game hen. Sprinkle the remaining salt and pepper inside the hen cavities.

Moisten a paper towel with cooking oil, and use long-handled tongs to lightly coat the grill rack. Set up your grill for indirect heat, adding a drip pan to collect the juices, and get the grill temperature up to 375° to 400°F.

4. Stage

Place the hens on the grill rack breast side up, directly over the drip pan. Grill them, covered, over indirect medium heat until a thermometer inserted in the thickest part of the thigh reads 170° to 175° and the meat juices run clear, 30 to 40 minutes. Remove the hens from the grill and let them sit for 10 minutes to allow the juices to settle before serving.
