How to cook deliciously - Banana Cake

1. Stage

Preheat the oven to 350°F. In a large bowl, cream the shortening and sugar until light and fluffy, five to seven minutes. Add the egg yolks, one at a time, beating well after each addition. Add the bananas and milk, and mix just until combined.

2. Stage

Combine the flour, baking powder, baking soda and salt. Add the dry ingredients to the creamed mixture just until blended.

3. Stage

In another bowl, beat the egg whites until soft peaks form. Fold the egg whites into the batter.

4. Stage

Pour the batter into a greased 13x9-inch baking pan. Bake the cake for 30 to 35 minutes, until a toothpick inserted in the center comes out clean. Cool the cake completely on a wire rack.

5. Stage

In a large bowl, beat the cream cheese and butter until fluffy. Add the confectioners' sugar, vanilla and salt, and beat until smooth. Spread the frosting over the cooled cake. Serve the cake with sliced bananas on top, if desired. Editor's Tip: If you try to spread frosting over a cake that hasn't completely cooled, crumbs will catch in the frosting. Let the cake cool, then frost it.
