1. Coconut oil - 1 ¼ cups
2. Firmly packed brown sugar - ½ cup
3. White sugar - ½ cup
4. Egg (Optional) - 1
5. Vanilla extract - 1 teaspoon
6. Whole wheat flour - 1 ½ cups
7. Baking soda - 1 teaspoon
8. Coarse salt - 1 teaspoon
9. Quick-cooking Irish oatmeal (such as McCann's®) - 3 cups
10. Egg, beaten (Optional) - 1
11. Golden raisins - ½ cup
12. Chopped almonds - ½ cup

How to cook deliciously - Healthy-ish Irish Oatmeal Cookies

1. Stage

Preheat oven to 350 degrees F (175 degrees C).

Grease 18 muffin cups with coconut oil.

Beat coconut oil, brown sugar, and white sugar with an electric mixer in a large bowl until smooth. Mix in the flour mixture until just incorporated.

Beat 1 egg and vanilla extract into the coconut oil mixture.
