Ingredients for - Italian Style Chicken Salad

1. Extra-virgin olive oil - ½ cup
2. Garlic, minced - 3 cloves
3. Lemons, juiced - 2
4. Roasted chicken, meat removed from bones and cut into bite-size pieces - 1 (2 pound)
5. Fennel, cored and cut into thin slices - 1 bulb
6. Celery, thinly sliced - 3 stalks
7. Red onion, thinly sliced - 1
8. Chopped fresh parsley - ½ cup
9. Mayonnaise - ½ cup
10. Lemon, zested - 1
11. Salt and ground black pepper to taste - 1
12. Arugula - 1 bunch

How to cook deliciously - Italian Style Chicken Salad

1. Stage

Heat olive oil in a skillet over medium heat. Cook and stir garlic until softened and golden brown, 3 to 5 minutes.

Stir in lemon juice; set aside to cool.
