1. Olive oil - 1 tablespoon
2. Onion, chopped - 1 large
3. Garlic, minced - 4 cloves
4. Frozen bell pepper strips - 1 (10 ounce) package
5. Black pepper to taste - 1 (10 ounce) package
6. Sweet white corn - 1 cup
7. Medium-hot salsa - 1 (16 ounce) jar
8. Chili powder - 1 teaspoon
9. No-salt-added black beans, drained - 2 (15 ounce) cans
10. Black-eyed peas, rinsed and drained - 1 (15 ounce) can
11. Chicken stock - 1 (10.5 ounce) can
12. Chicken bouillon - 1 cube
13. Water - 3 cups
14. Uncooked long grain rice - ½ cup

How to cook deliciously - Sola's New Year's Soup

1. Stage

Heat the olive oil in a deep pot over medium-high heat. Stir in the onion, garlic, and bell peppers; cook until onions are transparent and peppers are soft, about 10 minutes. Season to taste with black pepper. Stir in the corn, salsa, chili powder, black beans, black-eyed peas, chicken stock, chicken bouillon cube, water, and rice. Bring to a boil, then reduce heat to medium and simmer at least 30 minutes until the rice is tender.
