Preheat oven to 350°. In a medium heatproof bowl, microwave mozzarella in 30-second increments, stirring between each, until melted, about 1 minute 30 seconds total. Add almond flour, garlic powder, salt, and chili powder; season with pepper. Using your hands, knead dough a few times until a smooth ball forms.

Place dough between 2 sheets of parchment and roll to a rectangle about 1/8" thick. Using a knife or pizza cutter, cut dough into triangles. Spread triangles between 2 parchment-lined baking sheets.

Bake chips until edges are golden and starting to crisp, 12 to 14 minutes. Immediately season with salt, then transfer to a platter.
