1. Olive oil - 2 tablespoons
2. Butter - 1 tablespoon
3. Onion, diced - 1 medium
4. Garlic, minced - 2 cloves
5. Frozen corn - 1 (16 ounce) package
6. Salmon, drained and flaked - 2 (5 ounce) cans
7. Tomatoes, chopped - 2 medium
8. Lemon juice - 3 tablespoons
9. Curry paste - 2 tablespoons
10. Curry powder - 1 tablespoon
11. Chili-garlic sauce - 1 tablespoon
12. Ground cumin - 1 teaspoon
13. Ground coriander - 1 teaspoon
14. Salt and ground black pepper to taste - 1 teaspoon
15. Water, or as needed - ½ cup
16. Hot cooked rice - 2 cups

How to cook deliciously - Lemon Salmon Curry

1. Stage

Heat oil and butter in a large skillet over medium heat. Add onion and saute until soft and translucent, about 5 minutes. Add garlic and saute for 1 minute.

Add corn, salmon, tomatoes, lemon juice, curry paste, curry powder, chili-garlic sauce, cumin, coriander, salt, and pepper; bring to a simmer. Cover and cook, adding water as needed, for 10 to 15 minutes. Serve over hot rice.
