Ingredients for - Mango Chutney

1. White sugar - 6 cups
2. Brown sugar - 6 cups
3. Distilled white vinegar - 3 cups
4. Small red hot chile peppers, seeded and chopped - 5
5. Ground allspice - 4 teaspoons
6. Ground ginger - 2 teaspoons
7. Ground nutmeg - 2 teaspoons
8. Ground cinnamon - 1 teaspoon
9. Ground cloves - 1 teaspoon
10. Kosher salt - 1 teaspoon
11. Onions, chopped - 2 large
12. Golden raisins - 1 cup
13. Raisins - 1 cup
14. Fresh ginger root, chopped - ½ cup
15. Garlic, chopped - 3 cloves
16. Sliced, semi-ripe mangos - 16 cups
17. Sliced almonds (Optional) - ½ cup

How to cook deliciously - Mango Chutney

1. Stage

Combine white sugar, brown sugar, vinegar, chile peppers, allspice, ground ginger, nutmeg, cinnamon, cloves, and salt in a large saucepan. Bring to a boil; boil for 30 minutes.

Stir in onions, golden raisins, raisins, fresh ginger, and garlic; boil for another 30 minutes.

Stir in mangos (and almonds if using); reduce heat to low and simmer for 30 minutes.

4. Stage

Pack chutney into hot, sterilized jars, filling to within 1/4 inch of the top. Run a clean knife or thin spatula around the insides of the jars to remove any air bubbles. Wipe rims with a moist paper towel to remove any residue. Top with lids and screw rings on tightly.
