1. Roma (plum) tomatoes, peeled and chopped 8 pounds

4. Grated Parmesan cheese ¼ cup
5. Fresh basil, or more to taste, chopped 4 sprigs
6. Garlic, minced 3 cloves
7. Red wine 2 tablespoons
