Ingredients for - Mediterranean Bean Salad

1. Garbanzo beans, drained - 1 (15.5 ounce) can
2. Kidney beans, drained - 1 (15 ounce) can
3. Lemon, zested and juiced - 1
4. Tomato, chopped - 1 medium
5. Chopped red onion - ¼ cup
6. Chopped fresh parsley - ½ cup
7. Capers, rinsed and drained - 1 teaspoon
8. Extra virgin olive oil - 3 tablespoons
9. Salt, or to taste - ½ teaspoon

How to cook deliciously - Mediterranean Bean Salad

1. Stage

In a large bowl, stir together the garbanzo beans, kidney beans, lemon juice and zest, tomato, onion, parsley, capers, olive oil and salt. Cover, and refrigerate for about 2 hours, stirring occasionally, before serving.
