1. Uncooked brown rice 1 ½ cups
2. Water 3 cups
3. Red bell pepper, thinly sliced 1
4. Frozen green peas, thawed 1 cup
5. Raisins ½ cup
6. Sweet onion (such as Vidalia®), chopped ¼
7. Chopped kalamata olives ¼ cup
8. Vegetable oil ½ cup
9. Balsamic Vinegar ¼ cup
10. Dijon mustard 1 ¼ teaspoons
11. Salt and ground black pepper to taste 1 ¼ teaspoons
12. Feta cheese ¼ cup

How to cook deliciously - Mediterranean Brown Rice Salad

1 . Stage

Bring brown rice and water to a boil in a saucepan over high heat. Reduce heat to medium-low; cover and simmer until rice is tender and the liquid is absorbed, 45 to 50 minutes.

Combine red bell pepper, peas, raisins, onion, and olives in a bowl.
