1. Uncooked brown rice - 1 ½ cups
2. Water - 3 cups
3. Red bell pepper, thinly sliced - 1
4. Frozen green peas, thawed - 1 cup
5. Raisins - ½ cup
6. Sweet onion (such as Vidalia®), chopped - ¼
7. Chopped kalamata olives - ¼ cup
8. Vegetable oil - ½ cup
9. Balsamic Vinegar - ¼ cup
10. Dijon mustard - 1 ¼ teaspoons
11. Salt and ground black pepper to taste - 1 ¼ teaspoons
12. Feta cheese - ¼ cup

How to cook deliciously - Mediterranean Brown Rice Salad

1. Stage

Bring brown rice and water to a boil in a saucepan over high heat. Reduce heat to medium-low; cover and simmer until rice is tender and the liquid is absorbed, 45 to 50 minutes.

Combine red bell pepper, peas, raisins, onion, and olives in a bowl.
