1. Frozen purple hull peas 1 ½ pounds
2. Water to cover 1 ½ pounds
3. Fresh okra (Optional) 8 ounces
4. Bacon, cut into 1/2 inch pieces 4 ounces
5. White sugar 1 tablespoon
6. Baking soda ⅛ teaspoon
7. Salt and pepper to taste ⅛ teaspoon

1 . Stage

Place the purple hull peas into a large pot; pour in enough cold water to cover peas. Bring to a boil over high heat. Add okra if using and boil for 2 minutes, stirring twice. Reduce heat to medium-low; add bacon, sugar, baking soda, salt, and pepper. Cover and simmer until tender, 1 1/2 to 2 hours.
