Ingredients for - My Crab Cakes

1. Olive oil - 2 tablespoons
2. Green onions, chopped - 6
3. Canned crabmeat, drained - 1 (16 ounce) can
4. Egg - 1
5. Mayonnaise - 1 tablespoon
6. Dry mustard - 1 teaspoon
7. Buttery round crackers, crushed - 8 ounces
8. Ground cayenne pepper - ½ teaspoon
9. Garlic powder - 1 teaspoon
10. Old Bay Seasoning TM - ¼ teaspoon
11. Salt to taste - ¼ teaspoon
12. Ground black pepper to taste - ¼ teaspoon
13. Panko (Japanese bread crumbs) or regular dry bread crumbs - 1 cup
14. Olive oil, or as needed - ½ cup

How to cook deliciously - My Crab Cakes

1. Stage

Heat 2 tablespoons oil in a skillet over high heat. Saute green onions briefly until tender; cool slightly.

2. Stage

Combine crabmeat, sauteed green onions, egg, mayonnaise, dry mustard, crushed crackers, cayenne pepper, garlic powder, Old Bay seasoning, salt and pepper. Form into 1/2 inch thick patties. Coat the patties with bread crumbs.

3. Stage

Heat 1/2 cup oil in a large skillet over medium-high heat. Cook cakes until golden brown on each side. Drain briefly on paper towels and serve hot. David West
