3. Dijon mustard - 1 teaspoon
4. Hot honey (such as Mike's Hot Honey®) - 1 teaspoon
5. Salt and freshly ground black pepper to taste - 1 teaspoon
6. Chicken Salad: - 1 teaspoon
7. Cooked, shredded chicken - 2 cups
8. Lightly toasted French bread, cut into very small cubes - 2 (1/4 inch thick) slices
9. Tomatoes on the vine, diced - 2 small
10. Onion, thinly sliced - 1 small
11. Minced celery - 2 tablespoons
12. Chopped cilantro - 2 tablespoons
13. Pimento-stuffed olives, halved - 10 small
14. Mini croissants - 8

How to cook deliciously - No-Mayo Chicken Salad Sandwiches

1. Stage

Whisk together olive oil, red wine vinegar, Dijon mustard, hot honey, salt, and pepper in a small bowl until well combined; set aside.

2. Stage

Add chicken, bread cubes, tomatoes, onion, celery, cilantro, and olives to a large bowl; mix well. Drizzle dressing over the chicken mixture, and stir until well combined. Taste and adjust seasonings, if necessary.
